4.1.2Blending is an art, the secret of every roasting company.
All blends of coffee used for Espresso are made of different coffee qualities having different origins, mixed together in different proportions and compositions according to end-use and tastes. Each variety of coffee brings its organoleptic and sensory characteristics to the blend, which must be carefully balanced and merged together to give, when in the cup, a feeling of harmony and perfection to the senses: sight, smell, taste.
Espresso must be used in Arabica and Robusta blends: in terms of taste and smell, Arabica is an aromatic coffee, delicate with the right acidity, while Robusta is full-bodied and creamy.
